It'd be great to be able to rename approval stages so auditors can know in what capacity someone is approving the expense (ie rather than Stage 1, you could have "Budget holder", instead of Stage 2, "Department head" etc) and also have that approval history exported in a separate document and attached to the invoice when submitting to Xero.
